About the cheeses -

• Torndirrup Appenzelle produced by Dellendale Creameries - this smooth and creamy Alpine-style cheese is made in 12-kilo wheels by Swiss-trained Chris Vogel. Chris uses only the finest milk from his neighbours dairy on Denmark, WA. Removing the whole fats from the milk before production, the Tornidurrup Appanzelle has an appealing, dense mouthfeel that softens and becomes creamy and luscious as it warms in the mouth. The rind of the cheese is washed in brine as it ages creating a firm outer crust.

• HaVe Ash Blonde is the golden child of Robert St Duke, the happy cheesemaker from HaVe Cheese, Harvey WA. With a rich and creamy inner pate, the addition of edible ash just under the fluffy white mould not only creates a visual sensation but the ash actually helps the cheese soften and ripen faster than a regular brie, giving that luscious creamy feature. Best eaten at room temperature to capture its pure milkiness

• Spiced Cumin by Cambray, Nannup WA.…And what a cheese this is. A gold award-winning cheese at the 2019 WA dairy industry awards. This cow’s milk cheese is produced with milk sourced from the single-origin farm ‘Walsall Dairy’. Aged for a minimum of 6 months, the result is a rich, nutty and slightly sweet bite with the lingering addition of cumin seeds.

• Chilli Feta made by the husband and wife team at Local Goat in Gin Gin. What a gorgeous combination of texture and bite this cheese is! Such a lovely firm feta, brilliant and white in colour dotted with sweet and fiery red chilli flakes that really pop on the palate. But don’t worry if chilli is not your thing, they compliment not dominate, and really add to the sensational mouthfeel.
